Ingredients

  • 6 pieces large eggs
  • 4 tablespoons mayonnaise
  • 1 teaspoon Dijon mustard
  • 1.5 teaspoons sriracha sauce
  • 0.5 teaspoon hot paprika
  • 2 tablespoons pickled jalapeños, finely chopped
  • 0.5 teaspoon apple cider vinegar
  • 0.5 teaspoon smoked paprika (for garnish)
  • 6 leaves fresh cilantro leaves (optional, for garnish)
  • 0.25 teaspoon salt
  • 0.25 teaspoon black pepper

Directions

Step 1

Place the eggs in a medium-sized pot and cover them with water. Bring the water to a full boil over medium-high heat, then reduce the heat to low and let the eggs simmer for 9 minutes.

Step 2

Carefully transfer the eggs to a bowl filled with ice water and let them cool for 10 minutes. This makes peeling easier.

Step 3

Peel the cooled eggs and slice them in half lengthwise. Use a small spoon to gently scoop out the yolks and place them into a mixing bowl. Set the egg whites aside on a serving platter.

Step 4

Mash the yolks with a fork until fine and crumbly. Add mayonnaise, Dijon mustard, sriracha sauce, hot paprika, pickled jalapeños, apple cider vinegar, salt, and black pepper. Mix thoroughly until smooth and well combined.

Step 5

Taste the yolk mixture and adjust the seasoning or spice levels, if desired.

Step 6

Using either a spoon or a piping bag, carefully fill the hollowed egg whites with the yolk mixture. Be generous with the filling!

Step 7

Lightly sprinkle smoked paprika over the tops of the filled eggs for an extra smoky kick.

Step 8

If desired, garnish each deviled egg with a fresh cilantro leaf for a pop of color and flavor.

Step 9

Serve immediately, or refrigerate for up to 2 hours before serving to allow the flavors to meld further.
