Ingredients

  • 200 grams dark chocolate (70% cocoa)
  • 50 grams unsalted butter
  • 3 pieces large eggs, separated
  • 50 grams granulated sugar
  • 250 ml heavy cream (cold)
  • 1 teaspoon vanilla extract
  • 1 pinch pinch of salt
  • 0 shaved chocolate or cocoa powder (optional, for garnish)

Directions

Step 1

Place the dark chocolate and unsalted butter in a heatproof bowl. Set the bowl over a pot of simmering water, ensuring the bottom of the bowl does not touch the water. Melt the chocolate and butter together, stirring occasionally until smooth. Remove from heat and let it cool slightly.

Step 2

In another bowl, whisk the egg yolks with 25 grams of the granulated sugar until the mixture is pale and creamy. Gradually fold the egg yolk mixture into the melted chocolate until fully incorporated.

Step 3

In a separate clean bowl, whisk the egg whites with a pinch of salt until soft peaks form. Gradually add the remaining 25 grams of granulated sugar and continue whisking until stiff peaks form.

Step 4

Gently fold the whipped egg whites into the chocolate mixture in three batches. Be careful not to knock out too much air while mixing.

Step 5

In a chilled bowl, whip the heavy cream with the vanilla extract until soft peaks form.

Step 6

Gently fold the whipped cream into the chocolate mixture until no streaks remain, ensuring the mousse stays light and airy.

Step 7

Pour or spoon the mousse into serving glasses or bowls. Cover and refrigerate for at least 2 hours, or until set.

Step 8

Before serving, garnish with shaved chocolate or a dusting of cocoa powder, if desired.
