Ingredients

  • 3 cups Rhubarb
  • 1 cup Granulated sugar (for rhubarb)
  • 2 cups All-purpose flour
  • 1.5 cups Granulated sugar (for batter)
  • 1.5 teaspoons Baking powder
  • 0.5 teaspoon Salt
  • 0.5 cup Unsalted butter
  • 2 large Eggs
  • 1 teaspoon Vanilla extract
  • 1 cup Whole milk
  • 0.5 cup Brown sugar
  • 1 teaspoon Ground cinnamon

Directions

Step 1

Preheat your oven to 350°F (175°C) and grease a 9x13 inch baking dish.

Step 2

Wash and dice the rhubarb into small, bite-sized pieces. In a bowl, toss the rhubarb with 1 cup of granulated sugar and set it aside to macerate while preparing the batter.

In a medium bowl, whisk together the flour, 1.5 cups of granulated sugar, baking powder, and salt. Set aside.
