Ingredients

  • 12 oz Penne pasta
  • 2 cups Cherry tomatoes
  • 1 large Cucumber
  • 1 medium Red bell pepper
  • 0.5 cup Black olives (sliced)
  • 0.5 medium Red onion
  • 0.75 cup Feta cheese (crumbled)
  • 0.25 cup Fresh basil leaves
  • 0.5 cup Parmesan cheese (grated)
  • 0.25 cup Olive oil
  • 2 tbsp Red wine vinegar
  • 1 tsp Honey
  • 1 clove Garlic (minced)
  • 1 tsp Salt
  • 0.5 tsp Black pepper

Directions

Step 1

Cook the penne pasta according to package instructions until al dente. Drain and rinse under cold water to stop the cooking process. Set aside.

Step 2

While the pasta cooks, prepare the vegetables: halve the cherry tomatoes, dice the cucumber and red bell pepper, slice the red onion thinly, and slice the black olives if not pre-sliced.

In a large mixing bowl, combine the cooked pasta, cherry tomatoes, cucumber, red bell pepper, black olives, red onion, and crumbled feta cheese.
