Ingredients

  • 2 cups rolled oats
  • 0.5 cup almonds (chopped)
  • 0.5 cup walnuts (chopped)
  • 0.5 cup honey
  • 0.5 cup peanut butter
  • 1 teaspoon vanilla extract
  • 0.5 cup dark chocolate chips
  • 0.5 teaspoon ground cinnamon
  • 0.25 teaspoon salt
  • 2 tablespoons coconut oil (melted)

Directions

Step 1

Preheat your oven to 350°F (175°C) and line an 8x8-inch baking pan with parchment paper, leaving some overhanging on the sides for easy removal.

Step 2

In a large bowl, mix the rolled oats, chopped almonds, chopped walnuts, ground cinnamon, and salt until well combined.

Step 3

In a small saucepan over low heat, combine the honey, peanut butter, and coconut oil. Stir continuously until the mixture becomes smooth and fully melted. Remove from heat and stir in the vanilla extract.

Step 4

Pour the wet mixture into the bowl of dry ingredients and mix thoroughly until everything is evenly coated.

Step 5

Stir in the dark chocolate chips gently to ensure they don't fully melt from the warm mixture.

Step 6

Transfer the mixture to the prepared baking pan and press it evenly into the pan using the back of a spoon or your hands. Make sure it's packed tightly to ensure the bars hold together after baking.

Step 7

Bake in the preheated oven for 18-20 minutes, or until the edges are lightly golden. Avoid overbaking to keep the bars chewy.

Step 8

Remove the pan from the oven and allow it to cool completely in the pan. This will take approximately 1 hour at room temperature or 20-30 minutes in the refrigerator.

Step 9

Using the parchment overhang, lift the bars out of the pan and place them on a cutting board. Slice into 12 bars or your preferred size and shape.

Step 10

Store the bars in an airtight container at room temperature for up to 5 days, or refrigerate for up to 2 weeks. Enjoy your Heavenly Oat Bars as a healthy snack or breakfast on-the-go!
