Ingredients

  • 1.5 cups Whole wheat flour
  • 0.5 cups Rolled oats
  • 2 tablespoons Ground flaxseed
  • 1.5 teaspoons Baking powder
  • 0.5 teaspoons Baking soda
  • 1 teaspoon Ground cinnamon
  • 0.25 teaspoons Salt
  • 1 cup Shredded carrot
  • 0.5 cups Chopped apple
  • 0.25 cups Chopped walnuts or pecans
  • 0.75 cups Unsweetened applesauce
  • 0.25 cups Pure maple syrup
  • 1 large Egg
  • 1 teaspoon Vanilla extract
  • 0.5 cups Non-dairy or regular milk

Directions

Step 1

Preheat your oven to 350°F (175°C) and line a standard 12-cup muffin tin with paper liners or lightly grease with non-stick spray.

Step 2

In a large mixing bowl, combine the whole wheat flour, rolled oats, ground flaxseed, baking powder, baking soda, ground cinnamon, and salt. Mix well to evenly distribute the dry ingredients.

Step 3

In a separate medium bowl, whisk together the applesauce, maple syrup, egg, vanilla extract, and milk until smooth.

Step 4

Gently fold the wet ingredients into the dry ingredients until just combined (do not overmix).

Step 5

Add the shredded carrot, chopped apple, and chopped nuts to the batter. Fold gently to incorporate the mix-ins evenly.

Step 6

Divide the batter evenly among the prepared muffin cups, filling each cup about 3/4 full.

Step 7

Bake in the preheated oven for 20-22 minutes, or until a toothpick inserted into the center of a muffin comes out clean.

Step 8

Allow the muffins to cool in the pan for about 5 minutes, then transfer them to a wire rack to cool completely.

Step 9

Serve warm or at room temperature. Store leftovers in an airtight container at room temperature for up to 3 days or refrigerate for up to a week.
