Ingredients

  • 200 grams semi-sweet chocolate
  • 2 tablespoons unsalted butter
  • 4 large eggs (separated)
  • 3 tablespoons granulated sugar
  • 1 cup heavy cream
  • 1 teaspoon vanilla extract
  • 1 pinch of salt

Directions

Step 1

In a heatproof bowl, melt the semi-sweet chocolate and butter over a saucepan of simmering water (double boiler method). Stir until smooth and remove from heat to cool slightly.

Step 2

Separate the eggs, placing the yolks in one bowl and the whites in another. Whisk the yolks into the slightly cooled chocolate mixture until fully combined.

Step 3

In a large clean bowl, whip the heavy cream until soft peaks form. Stir in the vanilla extract and set aside.

Step 4

In another clean bowl, using an electric mixer, beat the egg whites and a pinch of salt until soft peaks form. Gradually add the sugar, one tablespoon at a time, and continue beating until stiff peaks are achieved.

Step 5

Using a spatula, gently fold the whipped cream into the chocolate mixture in batches to retain the airiness. Be careful not to overmix.

Step 6

Next, gently fold the beaten egg whites into the chocolate mixture in batches. Again, take care not to deflate the mousse by overmixing.

Step 7

Transfer the mousse into serving glasses or bowls. Cover with plastic wrap and refrigerate for at least 2 hours or until set.

Step 8

Serve chilled, garnished with your favorite toppings such as whipped cream, chocolate shavings, or fresh berries.
