Ingredients

  • 12 sheets Lasagna noodles
  • 2 pieces Boneless, skinless chicken breasts
  • 2 tablespoons Olive oil
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 4 cloves Garlic, minced
  • 4 tablespoons Butter
  • 4 tablespoons All-purpose flour
  • 4 cups Whole milk
  • 1 cup Parmesan cheese, grated
  • 4 cups Mozzarella cheese, shredded
  • 2 cups Ricotta cheese
  • 2 tablespoons Fresh parsley, chopped
  • 2 cups Spinach, fresh or frozen (if frozen, thawed and squeezed dry)

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Cook the lasagna noodles in a large pot of salted boiling water according to the package instructions. Drain and lay the sheets flat on a towel or non-stick baking sheet to prevent sticking.

Step 3

Season the chicken breasts with ½ teaspoon salt and ½ teaspoon black pepper.

Step 4

In a large skillet, heat the olive oil over medium heat and cook the chicken breasts until golden brown and fully cooked through, about 5–6 minutes per side. Remove from the skillet and let cool slightly before shredding with two forks.

Step 5

In the same skillet, add the minced garlic and sauté for about 1 minute until fragrant. Remove from heat.

Step 6

In a medium saucepan, melt the butter over medium heat. Whisk in the flour and cook for 1–2 minutes to form a roux.

Step 7

Gradually add the milk to the roux, whisking continuously to create a smooth sauce. Bring to a gentle simmer and cook for 4–5 minutes until thickened.

Step 8

Stir in the Parmesan cheese and ½ cup of mozzarella cheese. Season the sauce with ½ teaspoon salt and ½ teaspoon black pepper. Remove from heat.

Step 9

In a bowl, mix the ricotta cheese with the chopped parsley and spinach.

Step 10

To assemble the lasagna, spread ½ cup of the white sauce on the bottom of a 9x13-inch baking dish.

Step 11

Place a layer of lasagna noodles over the sauce, followed by a layer of ricotta mixture, shredded chicken, 1 cup of mozzarella cheese, and a drizzle of white sauce. Repeat these layers until all ingredients are used, finishing with a layer of noodles topped with white sauce and the remaining mozzarella cheese.

Step 12

Cover the dish with foil (lightly oiled to prevent sticking) and bake for 30 minutes.

Step 13

Remove the foil and bake for an additional 15–20 minutes, or until the cheese is bubbly and golden brown.

Step 14

Let the lasagna rest for 10 minutes before slicing and serving. Enjoy your Heavenly Chicken Lasagna with a fresh salad or garlic bread on the side!
