Ingredients

  • 2 cups Whole wheat flour
  • 1 teaspoon Baking powder
  • 0.25 teaspoons Salt
  • 0.75 cup Brown sugar, packed
  • 3 large Eggs
  • 1.5 teaspoons Pure vanilla extract
  • 0.75 cup Almonds, chopped
  • 0.5 cup Dried cranberries
  • 1 teaspoon Orange zest
  • 0.5 cup Optional: Chocolate chips

Directions

Step 1

Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or lightly grease it.

Step 2

In a medium bowl, whisk together the whole wheat flour, baking powder, and salt. Set aside.

Step 3

In a large mixing bowl, beat the brown sugar and eggs using a hand mixer or stand mixer on medium speed until light and fluffy (about 2-3 minutes).

Step 4

Mix in the vanilla extract and orange zest until well incorporated.

Step 5

Gradually add the dry ingredients to the wet ingredients, mixing until a thick dough forms.

Step 6

Stir in the chopped almonds, dried cranberries, and optional chocolate chips using a wooden spoon or spatula.

Step 7

Divide the dough in half and shape each portion into a log about 12 inches long and 2 inches wide on the prepared baking sheet. Flatten the tops slightly with your hands or a spatula.

Step 8

Bake the logs in the preheated oven for 25 minutes, or until they are lightly golden and firm to the touch.

Step 9

Remove the baking sheet from the oven and allow the logs to cool for 10 minutes. Reduce the oven temperature to 325°F (160°C).

Step 10

Using a serrated knife, carefully slice the logs diagonally into 1/2-inch thick biscotti.

Step 11

Place the biscotti slices cut-side down on the baking sheet. Bake for an additional 10-12 minutes, then flip the slices and bake for another 10 minutes, or until they are golden brown and crisp.

Step 12

Remove from the oven and let the biscotti cool completely on a wire rack before serving or storing.
