Ingredients

  • 400 g can, drained and rinsed chickpeas
  • 1 medium, grated carrot
  • 1 medium, grated and excess moisture squeezed out zucchini
  • 1 small, finely chopped onion
  • 2 cloves, minced garlic
  • 1 teaspoon coriander powder
  • 1 teaspoon cumin powder
  • 80 g (or about 1 cup rolled oats, processed into a fine powder) ground oats
  • 50 g (or about 1/2 cup) chickpea flour
  • 2 tablespoons, chopped fresh cilantro
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons olive oil

Directions

Step 1

In a large mixing bowl, mash the chickpeas with a potato masher or fork until mostly smooth but with some texture remaining.

Add the grated carrot, grated zucchini (make sure to squeeze out as much moisture as possible), chopped onion, minced garlic, coriander powder, cumin powder, ground oats, chickpea flour, and chopped cilantro to the mashed chickpeas.
