Ingredients

  • 2 tablespoons olive oil
  • 1 medium onion, chopped
  • 3 garlic cloves, minced
  • 2 celery stalks, sliced
  • 1 carrot, sliced
  • 1 red bell pepper, chopped
  • 28 ounces canned diced tomatoes
  • 4 cups fish stock
  • 1 cup dry white wine
  • 1 bay leaf
  • 2 fresh thyme sprigs
  • 3 Yukon Gold potatoes, diced
  • 1 pound fresh mussels, rinsed and bearded
  • 1 pound fresh shrimp, peeled and deveined
  • 1 pound firm white fish (e.g., cod, halibut), cut into pieces
  • 2 tablespoons fresh parsley, chopped
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 0.25 teaspoon red pepper flakes

Directions

Step 1

In a large pot, heat the olive oil over medium heat.

Step 2

Add the chopped onion, garlic, celery, carrot, and red bell pepper. Sauté for about 5 minutes until the vegetables are slightly softened.

Step 3

Stir in the canned diced tomatoes, fish stock, and white wine. Add the bay leaf and thyme sprigs. Bring the mixture to a boil.

Step 4

Once boiling, reduce the heat to medium-low and add the diced potatoes. Cover and let simmer for about 15 minutes, or until the potatoes are tender.

Step 5

Add the mussels to the pot. Cover and cook for about 5 minutes, until the mussels start to open.

Step 6

Stir in the shrimp and pieces of white fish. Cover the pot again and cook for an additional 5 minutes, or until the seafood is opaque and cooked through.

Step 7

Discard any unopened mussels and the bay leaf. Season the stew with salt, black pepper, and red pepper flakes to taste.

Step 8

Garnish with chopped fresh parsley before serving.

Step 9

Serve hot with crusty bread on the side.
