Ingredients

  • 4 medium (about 2 lbs) potatoes
  • 2 tablespoons olive oil
  • 1 large, chopped onion
  • 2 medium, sliced carrot
  • 2 stalks, chopped celery
  • 3 cloves, minced garlic
  • 4 cups vegetable broth
  • 1 15-ounce can diced tomatoes
  • 1 bay leaf
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 cup frozen green peas
  • 2 tablespoons, chopped fresh parsley

Directions

Step 1

Peel and cut the potatoes into approximately 1-inch cubes and set aside.

Step 2

In a large pot, heat olive oil over medium heat. Add the chopped onion, and sauté for 3-4 minutes until they start to become translucent.

Step 3

Add the sliced carrots, chopped celery, and minced garlic to the pot. Cook for an additional 5 minutes, stirring often, until the vegetables begin to soften.

Step 4

Stir in the vegetable broth, diced tomatoes with their juice, the diced potatoes, bay leaf, thyme, oregano, salt, and black pepper.

Step 5

Bring the mixture to a boil, then reduce the heat to low. Cover the pot and let the stew simmer for about 25 minutes or until the potatoes and carrots are tender.

Step 6

Remove and discard the bay leaf. Stir in the frozen green peas and cook for an additional 5 minutes.

Step 7

Taste the stew and adjust seasoning if necessary.

Step 8

Sprinkle with freshly chopped parsley before serving warm.
