Ingredients

  • 2 cups elbow macaroni
  • 1 pound ground beef
  • 1 large, finely chopped onion
  • 1 medium, diced green bell pepper
  • 3 minced garlic cloves
  • 1 14.5-ounce can diced tomatoes
  • 1 8-ounce can tomato sauce
  • 1 cup beef broth
  • 1 teaspoon dried Italian seasoning
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 cup shredded cheddar cheese
  • 1 tablespoon vegetable oil

Directions

Step 1

Bring a large pot of salted water to a boil. Cook the elbow macaroni according to the package instructions until al dente. Drain and set aside.

Step 2

Heat the vegetable oil in a large skillet or Dutch oven over medium heat.

Step 3

Add the ground beef to the skillet and cook, breaking it apart with a wooden spoon, until it is browned and no longer pink, about 6-8 minutes. Drain excess fat if necessary.

Step 4

Add the chopped onion and diced green bell pepper to the skillet. Sauté for 4-5 minutes until the vegetables are softened.

Step 5

Stir in the minced garlic and cook for another 1 minute until fragrant.

Step 6

Add the diced tomatoes (with their juices), tomato sauce, and beef broth to the skillet. Mix well to combine.

Step 7

Stir in the Italian seasoning, paprika, salt, and black pepper. Let the mixture simmer over low heat for 8-10 minutes, stirring occasionally.

Step 8

Add the cooked macaroni to the beef and tomato mixture. Stir until the pasta is fully coated and evenly mixed with the sauce.

Step 9

Sprinkle the shredded cheddar cheese on top and cover the skillet. Let it cook for 2-3 minutes on low heat until the cheese melts.

Step 10

Remove the skillet from heat and let it rest for a few minutes before serving. Serve warm and enjoy your hearty macaroni and beef!
