Ingredients

  • 2 tablespoons olive oil
  • 1 large yellow onion
  • 2 medium carrots
  • 2 celery stalks
  • 3 garlic cloves
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 1 bay leaf
  • 1 cup green lentils
  • 2 cups ham (diced or shredded)
  • 6 cups chicken broth
  • 2 cups water
  • 2 tablespoons tomato paste
  • 0.5 teaspoons salt
  • 0.25 teaspoons black pepper
  • 2 tablespoons fresh parsley (optional, for garnish)

Directions

Step 1

Heat the olive oil in a large pot or Dutch oven over medium heat.

Step 2

Dice the onion, carrots, and celery. Mince the garlic cloves.

Step 3

Add the onion, carrots, and celery to the pot and sauté for 5-7 minutes until they soften and become fragrant.

Step 4

Stir in the minced garlic, thyme, oregano, and bay leaf. Cook for an additional 1 minute.

Step 5

Add the green lentils, diced or shredded ham, chicken broth, water, and tomato paste to the pot. Stir well to combine.

Step 6

Increase the heat to high and bring the soup to a boil.

Step 7

Once boiling, reduce the heat to low and cover the pot with a lid. Let the soup simmer for about 35-40 minutes, or until the lentils are tender.

Step 8

Season the soup with salt and black pepper to taste. Adjust seasoning if needed.

Step 9

Remove the bay leaf before serving.

Step 10
