Ingredients

  • 1 lb Italian sausage (mild or spicy, casings removed)
  • 1 tbsp olive oil
  • 1 medium yellow onion, diced
  • 2 medium carrots, peeled and sliced
  • 2 stalks celery stalks, diced
  • 3 cloves garlic, minced
  • 3 medium potatoes, diced into bite-sized pieces
  • 28 oz crushed tomatoes
  • 4 cups chicken broth
  • 15 oz cannellini beans, drained and rinsed
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • 0.5 tsp red pepper flakes (optional)
  • 2 tbsp fresh parsley, chopped (for garnish)
  • 1 tsp salt
  • 0.5 tsp black pepper

Directions

Step 1

Heat the olive oil in a large pot or Dutch oven over medium-high heat.

Step 2

Add the Italian sausage to the pot and cook until browned, breaking it into small pieces with a wooden spoon. Transfer the cooked sausage to a plate and set aside.

Step 3

In the same pot, add the diced onion, carrots, and celery. Sauté for 5-7 minutes, or until the vegetables soften.

Step 4

Add the minced garlic and cook for an additional 1 minute, stirring frequently to avoid burning.

Step 5

Stir in the diced potatoes, and then add the crushed tomatoes, chicken broth, oregano, basil, red pepper flakes (if using), salt, and black pepper.

Step 6

Return the cooked sausage to the pot and bring the mixture to a boil.

Step 7

Reduce the heat to low, cover the pot, and let the stew simmer for 25 minutes, or until the potatoes are tender.

Step 8

Stir in the cannellini beans and cook for an additional 5 minutes, allowing the beans to warm through.

Step 9

Taste and adjust seasoning if necessary.

Step 10

Ladle the stew into bowls and garnish with fresh parsley before serving. Enjoy with crusty bread on the side!
