Ingredients

  • 1 pound ground beef
  • 1 medium yellow onion, diced
  • 3 cloves garlic cloves, minced
  • 3 carrots, peeled and sliced into rounds
  • 2 celery stalks, diced
  • 2 large russet potatoes, peeled and diced
  • 1 cup frozen green beans
  • 14 ounces diced tomatoes, canned (with juice)
  • 2 tablespoons tomato paste
  • 4 cups beef broth
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 tablespoon olive oil

Directions

Step 1

Heat a large pot or Dutch oven over medium-high heat. Add the olive oil to coat the bottom of the pot.

Step 2

Add the ground beef to the pot and cook, breaking it up with a wooden spoon, until browned and fully cooked, about 5-7 minutes. Drain excess fat if necessary.

Step 3

Stir in the diced onion and minced garlic. Cook until the onion becomes translucent, about 3-4 minutes.

Step 4

Add the carrots, celery, and potatoes. Stir well to combine and cook for 5 minutes to begin softening the vegetables.

Step 5

Add the diced tomatoes (with juice) and tomato paste, stirring to distribute the tomato flavor evenly.

Step 6

Pour in the beef broth and add the Worcestershire sauce, dried thyme, paprika, salt, and black pepper. Stir thoroughly.

Step 7

Bring the mixture to a boil, then reduce the heat to low. Cover the pot and let the stew simmer for 25-30 minutes, or until the potatoes and carrots are tender.

Step 8

Stir in the frozen green beans during the last 5 minutes of cooking to warm them through.

Step 9

Taste the stew and adjust seasoning with additional salt or pepper if needed.

Step 10

Serve hot in bowls, garnished with chopped parsley if desired, and enjoy!
