Ingredients

  • 1 pound ground beef
  • 1 tablespoon olive oil
  • 1 large onion, chopped
  • 3 garlic cloves, minced
  • 3 medium carrots, sliced
  • 2 celery stalks, sliced
  • 2 medium russet potatoes, peeled and diced
  • 14.5 ounces can of diced tomatoes
  • 6 cups beef broth
  • 1 bay leaf
  • 1 teaspoon dried thyme
  • 1 cup frozen peas
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons parsley, chopped (optional)

Directions

Step 1

In a large pot, heat olive oil over medium heat. Add the ground beef and cook until browned, about 5-7 minutes. Use a slotted spoon to remove the beef from the pot and set aside.

Step 2

In the same pot, add the chopped onion, minced garlic, sliced carrots, and sliced celery. Sauté for about 5 minutes until the vegetables are softened.

Step 3

Add the diced potatoes, diced tomatoes (including their juices), and the cooked beef back into the pot.

Step 4

Pour in the beef broth, and add the bay leaf and dried thyme. Stir to combine.

Step 5

Bring the soup to a boil, then reduce the heat to low, cover, and let it simmer for about 20 minutes or until the potatoes are tender.

Step 6

Stir in the frozen peas, salt, and black pepper. Cook for another 5 minutes until the peas are heated through.

Step 7

Remove the bay leaf and taste the soup, adjusting seasonings if necessary.

Step 8

Serve in bowls, garnished with chopped parsley if desired, and enjoy the warmth of this hearty soup.
