Ingredients

  • 1 lb ground beef
  • 2 large russet potatoes
  • 1 medium yellow onion
  • 1 medium green bell pepper
  • 2 large garlic cloves
  • 1 tsp smoked paprika
  • 1 tsp dried oregano
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 2 tbsp olive oil
  • 1 cup shredded cheddar cheese
  • 2 tbsp fresh parsley (optional, for garnish)

Directions

Step 1

Wash and peel the potatoes. Dice them into small, even cubes approximately 1/2 inch in size.

Finely chop the onion, bell pepper, and garlic cloves. Set aside.

Step 3

In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the diced potatoes and cook for 10-12 minutes, stirring occasionally, until they are golden brown and crispy. Remove the potatoes from the skillet and set aside.

In the same skillet, heat the remaining tablespoon of olive oil. Add the chopped onion and bell pepper. Sauté for 4-5 minutes, until softened.
