Ingredients

  • 1 pound ground beef
  • 1 tablespoon olive oil
  • 1 medium yellow onion, diced
  • 3 garlic cloves, minced
  • 3 medium carrots, diced
  • 3 celery stalks, diced
  • 2 medium potatoes, peeled and cubed
  • 1 medium zucchini, diced
  • 1 cup green beans, trimmed and chopped
  • 1 14.5-ounce can diced tomatoes, canned (with juices)
  • 2 tablespoons tomato paste
  • 6 cups beef broth
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 1 bay leaf
  • 1.5 teaspoons salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons parsley, chopped (optional garnish)

Directions

Step 1

Heat the olive oil in a large pot or Dutch oven over medium heat.

Step 2

Add the ground beef to the pot and cook until browned, breaking it up with a wooden spoon or spatula. Drain any excess fat and set the beef aside on a plate if necessary.

Step 3

In the same pot, add the diced onion and cook for 3-4 minutes, stirring occasionally, until softened.

Step 4

Stir in the minced garlic and cook for 1 minute until fragrant.

Step 5

Add the carrots, celery, potatoes, zucchini, and green beans to the pot. Cook for 5-6 minutes, stirring occasionally, to slightly soften the vegetables.

Step 6

Stir in the canned diced tomatoes (including the juices), tomato paste, and browned ground beef.

Step 7

Pour in the beef broth, stirring to combine. Add the dried thyme, dried oregano, bay leaf, salt, and black pepper to the pot.

Step 8

Bring the mixture to a boil, then reduce the heat to low and cover the pot with a lid. Simmer for 25-30 minutes, or until the vegetables are tender.

Step 9

Taste and adjust seasoning with additional salt and pepper, if needed.

Step 10

Remove the bay leaf before serving.

Step 11

Ladle the soup into bowls and garnish with freshly chopped parsley, if desired. Serve warm with crusty bread or crackers on the side.
