Ingredients

  • 500 grams fresh green beans
  • 2 tablespoons olive oil
  • 1 large, chopped onion
  • 3 minced garlic cloves
  • 2 medium, sliced carrots
  • 3 large, chopped tomatoes
  • 2 medium, diced potatoes
  • 4 cups vegetable broth
  • 1 bay leaf
  • 1 teaspoon dried thyme
  • 1 teaspoon, or to taste salt
  • 0.5 teaspoon black pepper
  • 0.25 teaspoon red pepper flakes
  • 0.25 cup, chopped fresh parsley

Directions

Step 1

Rinse the green beans thoroughly under cold water, trim the ends, and cut them into approximately 2-inch pieces.

Step 2

Heat the olive oil in a large pot over medium heat. Add the chopped onion and cook until softened, about 5 minutes.

Step 3

Add the minced garlic to the pot and sauté for another 1 minute until fragrant.

Step 4

Stir in the sliced carrots and cook for another 3-4 minutes until they start to soften.

Step 5

Add the chopped tomatoes, diced potatoes, and the prepared green beans to the pot. Stir well to combine.

Step 6

Pour in the vegetable broth and add the bay leaf and dried thyme. Stir to combine.

Step 7

Season the stew with salt, black pepper, and red pepper flakes. Stir well.

Step 8

Bring the stew to a boil over medium-high heat, then reduce the heat to low, cover, and let it simmer for about 30 minutes, or until the vegetables are tender.

Step 9

Adjust the salt and pepper to taste if needed. Remove the bay leaf before serving.

Step 10

Garnish the stew with freshly chopped parsley and serve hot.
