  • 1.5 pounds beef stew meat, cubed

  • 6 cups beef broth
  • 15 ounces diced tomatoes, canned (with juice)
  • 3 medium potatoes, peeled and diced into 1-inch cubes
  • 2 medium carrots, peeled and sliced
  • 1 large red bell pepper, diced
  • 1 teaspoon ground caraway seeds
  • 1 teaspoon dried marjoram
  • 1 bay leaf
  • 1.5 teaspoons salt
  • 0.5 teaspoons black pepper
  • 2 tablespoons fresh parsley, chopped (for garnish)

Directions

Step 1

Heat the olive oil in a large Dutch oven or soup pot over medium-high heat.

Add the beef stew meat and sear until browned on all sides, about 5 minutes. Remove the meat with a slotted spoon and set aside.
