Ingredients

  • 4 large Russet potatoes
  • 2 heads Garlic
  • 1 medium Yellow onion
  • 3 tablespoons Butter
  • 1 tablespoon Olive oil
  • 4 cups Chicken or vegetable broth
  • 1 cup Heavy cream
  • 1 teaspoon Dried thyme
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 tablespoons Fresh parsley
  • 0.5 cup Shredded cheddar cheese (optional for garnish)

Directions

Step 1

Preheat your oven to 400°F (200°C).

Step 2

Slice the tops off the garlic heads just enough to expose the cloves slightly, then drizzle them with olive oil. Wrap each head in foil and roast in the oven for 30–35 minutes until soft and golden.

While the garlic is roasting, peel and dice the potatoes into 1-inch cubes and set aside.

Dice the yellow onion into small pieces.

Melt the butter in a large pot over medium heat. Add the diced onion and sauté for 5–7 minutes until translucent and fragrant.

Once the garlic is done roasting, let it cool slightly. Squeeze the roasted cloves out of their skins into a small bowl and mash lightly with a fork.

Add the diced potatoes, roasted garlic, and dried thyme to the pot with the onions. Stir to combine.
