  • 1 cup beef broth
  • 2 tablespoons chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 0.5 teaspoon ground black pepper
  • 1 teaspoon sugar
  • 0.25 cup fresh cilantro, chopped (optional, for garnish)
  • 0.5 cup shredded cheddar cheese (optional, for topping)
  • 0.25 cup sour cream (optional, for topping)

Directions

Step 1

Heat the olive oil in a large pot or Dutch oven over medium heat.

Step 2

Add the diced onion and green bell pepper. Sauté for 5-7 minutes, until softened.

Step 3

Stir in the minced garlic and cook for an additional minute, until fragrant.

Step 4

Push the vegetables to one side of the pot and add the ground beef. Cook the beef for 5-7 minutes, breaking it into small pieces, until browned.

Drain any excess grease from the pot if needed.

Step 6

Stir in the canned diced tomatoes, kidney beans, black beans, and tomato paste.

Step 7

Pour in the beef broth, then add the chili powder, ground cumin, smoked paprika, oregano, salt, black pepper, and sugar. Stir to combine.

Step 8

Bring the mixture to a boil, then reduce the heat to low. Cover the pot and let it simmer for 30 minutes, stirring occasionally to prevent sticking.

Step 9

Taste and adjust seasonings as needed.

Serve hot, topped with chopped cilantro, shredded cheddar cheese, and sour cream if desired.
