  • 1.5 pounds boneless, skinless chicken thighs

  • 2 medium potatoes, peeled and cubed
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 leaf bay leaf
  • 1 cup frozen peas
  • 2 tablespoons chopped fresh parsley

Directions

Step 1

Season the chicken thighs with 1 teaspoon of salt and 1 teaspoon of black pepper.

Step 2

Heat 1 tablespoon of olive oil in a large pot over medium-high heat. Add the chicken thighs and sear on both sides until golden brown, about 4-5 minutes per side. Remove chicken from the pot and set aside.

In the same pot, add the remaining tablespoon of olive oil. Add the chopped onion, sliced carrots, and chopped celery. Cook, stirring occasionally, until the vegetables are softened, about 5 minutes.
