Ingredients

  • 2 large flour tortillas
  • 4 large eggs
  • 2 tablespoons milk
  • 0.25 teaspoon salt
  • 0.25 teaspoon black pepper
  • 4 bacon strips
  • 1 cup sharp cheddar cheese, shredded
  • 1 cup baby spinach leaves
  • 0.5 cup cherry tomatoes, halved
  • 1 tablespoon butter

Directions

Step 1

Preheat a large non-stick skillet over medium heat.

Step 2

In a small bowl, whisk together the eggs, milk, salt, and black pepper.

Add the butter to the skillet and allow it to melt, then pour in the egg mixture.

Gently stir the eggs with a spatula to create soft curds, cooking for about 3-5 minutes until the eggs are just set. Transfer the scrambled eggs to a bowl and cover to keep warm.
