  • 3 medium russet potatoes
  • 2 tablespoons olive oil
  • 1 tablespoon unsalted butter
  • 8 ounces breakfast sausage
  • 1 medium, diced red bell pepper
  • 1 medium, diced green bell pepper
  • 1 medium, diced yellow onion
  • 2 cloves, minced garlic
  • 4 large eggs
  • 1 cup, shredded cheddar cheese
  • 1 teaspoon (or to taste) salt
  • 0.5 teaspoon (or to taste) black pepper
  • 2 tablespoons chopped parsley

Directions

Step 1

Peel the potatoes and cut them into small 1/2-inch cubes. Rinse them in cold water to remove excess starch, then pat dry with a clean towel.

Step 2

Heat 1 tablespoon of olive oil and the butter in a large, oven-safe skillet over medium heat. Once hot, add the diced potatoes in an even layer. Sprinkle with salt and pepper. Cook for 10-12 minutes, stirring occasionally, until the potatoes are golden and crispy. Remove from skillet and set aside.

In the same skillet, add the remaining 1 tablespoon of olive oil. Add the breakfast sausage, breaking it up into small pieces with a wooden spoon, and cook for 5-6 minutes until browned and fully cooked. Remove from skillet and set aside with the potatoes.
