Ingredients

  • 2 pounds beef short ribs
  • 2 tablespoons olive oil
  • 1 large onion, chopped
  • 4 garlic cloves, minced
  • 3 carrots, peeled and sliced
  • 2 celery stalks, sliced
  • 2 large potatoes, diced
  • 1 15-ounce can diced tomatoes, canned
  • 8 cups beef broth
  • 1 bay leaf
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons parsley, chopped

Directions

Step 1

Heat the olive oil in a large pot over medium-high heat.

Season the beef short ribs with salt and pepper.

Add the ribs to the pot and brown on all sides, about 8-10 minutes. Remove the ribs and set aside.
