Ingredients

  • 2 cans (15 oz each) canned kidney beans
  • 1 can (15 oz) canned black beans
  • 1 can (15 oz) canned white beans
  • 2 tablespoons olive oil
  • 1 medium yellow onion
  • 3 cloves garlic cloves
  • 1 can (14.5 oz) canned diced tomatoes
  • 2 tablespoons tomato paste
  • 1 cup vegetable broth
  • 2 tablespoons brown sugar
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon smoked paprika
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1 teaspoon salt
  • 0.5 teaspoon ground black pepper
  • 1 cup shredded cheddar cheese (optional)
  • 1 tablespoon fresh parsley (optional)

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Drain and rinse the kidney beans, black beans, and white beans, then set them aside.

Step 3

Heat the olive oil in a large oven-safe skillet or Dutch oven over medium heat.

Step 4

Dice the yellow onion and mince the garlic cloves. Add them to the skillet and sauté for 3-4 minutes until softened and fragrant.

Step 5

Stir in the canned diced tomatoes, tomato paste, vegetable broth, brown sugar, apple cider vinegar, smoked paprika, ground cumin, chili powder, salt, and black pepper. Mix well and bring to a simmer.

Step 6

Add the drained and rinsed beans to the skillet. Stir to combine everything evenly.

Step 7

Let the mixture simmer for 5-7 minutes, stirring occasionally, to allow the flavors to meld.

Step 8

If your skillet or Dutch oven is not oven-safe, transfer the mixture to a 9x13-inch baking dish.

Step 9

Place the skillet or baking dish in the preheated oven and bake for 30 minutes uncovered.

Step 10

If desired, sprinkle shredded cheddar cheese on top during the last 10 minutes of baking to create a melted cheese topping.

Step 11

Remove the dish from the oven and let it cool for 5 minutes before serving.

Step 12

Garnish with fresh parsley if desired and serve warm. Enjoy your Hearty Bean Bake!
