  • 2 tablespoons Low-fat feta cheese (optional)
  • 0.25 teaspoon Garlic powder
  • 0.25 teaspoon Black pepper
  • 0.125 teaspoon Salt

Directions

Step 1

Whisk the egg whites in a small bowl until slightly frothy. Add garlic powder, black pepper, and salt, and whisk again to combine.

Step 2

Heat a non-stick skillet over medium heat and add the olive oil.

Step 3

Add the chopped red onion to the skillet and sauté for 1-2 minutes until translucent.

Add the baby spinach and sauté for another 1-2 minutes until wilted.

Step 5

Slice the cherry tomatoes in half and add them to the skillet, cooking for 1 additional minute.

Step 6

Spread the cooked veggies evenly across the skillet and pour the whisked egg whites over them. Tilt the skillet gently to allow the egg whites to spread evenly.
