Ingredients

  • 300 g Whole wheat flour
  • 200 g Bread flour
  • 250 ml Low-fat milk (warm, about 110°F)
  • 50 ml Olive oil
  • 40 g Honey
  • 5 g Salt
  • 7 g Instant yeast
  • 15 g Ground flaxseed
  • 50 ml Water (warm, about 110°F)

Directions

Step 1

In a small bowl, mix the ground flaxseed with warm water and set aside for 5 minutes to form a thick mixture. This acts as a binding agent and adds additional fiber to the buns.

Step 2

In a large mixing bowl, combine the whole wheat flour, bread flour, and salt. Stir well with a whisk to evenly distribute the ingredients.

Step 3

In another bowl, mix the warm low-fat milk, olive oil, honey, and instant yeast. Stir gently until the yeast dissolves.

Step 4

Pour the wet mixture and the flaxseed mixture into the dry ingredients. Using a wooden spoon or your hands, mix until a dough forms.

Step 5

Transfer the dough to a lightly floured surface and knead for about 8-10 minutes until smooth and elastic. Alternatively, you can use a stand mixer with a dough hook for about 5-6 minutes on medium speed.

Step 6

Place the dough in a lightly oiled bowl and cover it with a clean kitchen towel or plastic wrap. Let it rise in a warm place for about 1 hour, or until the dough has doubled in size.

Step 7

After the dough has risen, gently punch it down to release any air bubbles. Divide the dough into 12 equal portions and shape each piece into a smooth ball.

Step 8

Arrange the dough balls on a baking sheet lined with parchment paper, leaving some space between them. Cover the buns with a kitchen towel and let them rise again for 30 minutes.

Step 9

Preheat your oven to 375°F (190°C).

Step 10

Bake the buns in the preheated oven for 18-20 minutes or until golden brown on top.

Step 11

Remove the buns from the oven and let them cool on a wire rack. Serve warm or store in an airtight container for up to 3 days.
