Ingredients

  • 250 grams low-fat paneer
  • 500 grams fresh spinach
  • 1 medium onion
  • 1 medium tomato
  • 3 cloves garlic
  • 1 inch ginger
  • 1 green chili
  • 1 teaspoon cumin seeds
  • 0.5 teaspoon turmeric powder
  • 1 teaspoon coriander powder
  • 0.5 teaspoon garam masala
  • 0.5 teaspoon salt
  • 2 tablespoons olive oil
  • 0.25 cup water
  • 1 tablespoon lemon juice

Directions

Step 1

Rinse the spinach leaves thoroughly under running water. Boil water in a large pot, blanch the spinach for 2-3 minutes, then remove and plunge into ice-cold water to preserve its bright green color. Drain and set aside.

Step 2

Chop the onion, tomato, green chili, and ginger finely. Crush the garlic cloves.

Step 3

Cut the low-fat paneer into medium-sized cubes and set aside.

Step 4

In a blender, puree the blanched spinach along with the green chili to a smooth paste. Add a little water if needed to aid blending.

Step 5

Heat olive oil in a non-stick pan over medium heat. Add cumin seeds and let them splutter.

Step 6

Add the chopped onions and sauté until they turn translucent.

Step 7

Stir in the crushed garlic and ginger, and continue to sauté for another minute until fragrant.

Step 8

Add the chopped tomato, turmeric powder, and coriander powder. Cook until the tomatoes become soft and oil starts to separate from the mixture.

Step 9

Pour the spinach puree into the pan, mix well, and let it cook for about 5 minutes on medium heat.

Step 10

Gently add the paneer cubes to the spinach mixture, ensuring they are well integrated into the sauce.

Step 11

Add water to achieve the desired consistency, stir in salt, and let simmer for an additional 5 minutes.

Step 12

Finish with garam masala, stirring it in for the last minute of cooking.

Step 13

Remove from heat and add lemon juice to enhance the dish’s flavors.

Step 14

Serve hot with whole wheat roti or steamed brown rice.
