  • 250 grams Fresh spinach leaves

  • 1 medium, finely chopped Tomato
  • 2 minced Garlic cloves
  • 1 inch, minced Ginger
  • 1 small, slit Green chili
  • 0.5 teaspoon Mustard seeds
  • 0.5 teaspoon Cumin seeds
  • 0.5 teaspoon Turmeric powder
  • 0.5 teaspoon Black pepper
  • 8 leaves Curry leaves
  • 1 tablespoon Cold-pressed olive oil
  • 1 tablespoon Lemon juice
  • 50 milliliters Water

Directions

Step 1

Wash the spinach leaves thoroughly to remove any dirt. Drain and chop them roughly.

Step 2

Heat olive oil in a large pan over medium heat. Add mustard seeds and cumin seeds, and let them splutter.

Step 3

Add curry leaves, minced garlic, and ginger. Sauté for about 2 minutes until fragrant.

Step 4

Add the finely chopped onion and green chili. Sauté until the onion becomes translucent.

Stir in the chopped tomato and cook for another 2-3 minutes until the tomato turns soft.

Add turmeric powder and black pepper, and mix well.
