Ingredients

  • 4 pieces turkey shanks
  • 2 tablespoons olive oil
  • 2 medium onions, chopped
  • 2 medium carrots, diced
  • 2 stalks celery stalks, diced
  • 3 cloves garlic cloves, minced
  • 4 cups low-sodium vegetable or chicken broth
  • 1 can (14 ounces) diced tomatoes, no added salt
  • 0.5 cup dry white wine
  • 1 tablespoon fresh thyme
  • 1 leaf bay leaf
  • 0.5 teaspoon black pepper
  • 0.25 cup fresh parsley, chopped
  • 1 tablespoon lemon zest

Directions

Step 1

Pat turkey shanks dry with a paper towel. Season lightly with black pepper.

Step 2

Heat olive oil over medium-high heat in a large oven-safe pot or Dutch oven.

Step 3

Once hot, add turkey shanks and brown them on all sides, about 8 minutes. Remove and set aside.

Step 4

In the same pot, add onions, carrots, celery, and garlic. Sauté until onions are translucent, around 5 minutes.

Step 5

Stir in the dry white wine, scraping the bottom of the pot to release any browned bits. Allow wine to reduce by half, approximately 3 minutes.

Step 6

Add the turkey shanks back to the pot. Pour in the low-sodium broth and diced tomatoes.

Step 7

Add thyme, bay leaf, and black pepper. Stir to combine.

Step 8

Bring the pot to a gentle simmer, cover, and reduce heat to low. Cook for 1.5 hours or until the turkey is tender and falls off the bone.

Step 9

Remove the bay leaf and discard. Adjust seasoning if necessary.

Step 10

Serve the Osso Buco topped with fresh parsley and lemon zest for a zesty finish.
