Ingredients

  • 3 medium Red onions
  • 1 tablespoon Olive oil
  • 2 large Garlic cloves
  • 1 inch piece Fresh ginger
  • 2 tablespoons Balsamic vinegar
  • 1 teaspoon Mustard seeds
  • 1 teaspoon Coriander seeds
  • 0.5 teaspoon Turmeric powder
  • 8 leaves Curry leaves
  • 3 tablespoons Cilantro
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Ground black pepper

Directions

Step 1

Peel and finely slice the red onions. Set aside.

Step 2

Peel and mince the garlic cloves.

Step 3

Peel and grate the ginger.

Step 4

Heat the olive oil in a large non-stick pan over medium heat.

Step 5

Add mustard seeds and coriander seeds to the pan and sauté until they start to pop.

Step 6

Add the curry leaves, minced garlic, and grated ginger. Stir for 1-2 minutes until aromatic.

Step 7

Add the sliced onions to the pan, stirring well to coat them with the spices and oil.

Reduce the heat to low, cover the pan, and cook the onions gently for 20 minutes, stirring occasionally, until they are soft and lightly caramelized.
