Ingredients

  • 3 cups rolled oats
  • 1 cup raw almonds
  • 1 cup raw walnuts
  • 1 cup raw pumpkin seeds
  • 0.5 cup raw sunflower seeds
  • 0.25 cup ground flaxseed
  • 0.5 cup unsweetened coconut flakes
  • 0.5 cup honey
  • 0.25 cup olive oil
  • 1 teaspoon vanilla extract
  • 1 teaspoon cinnamon
  • 0.5 teaspoon salt
  • 0.5 cup dried cranberries
  • 0.5 cup dried apricots, chopped

Directions

Step 1

Preheat your oven to 325°F (163°C) and line a large baking sheet with parchment paper.

Step 2

In a large bowl, mix together the rolled oats, almonds, walnuts, pumpkin seeds, sunflower seeds, ground flaxseed, and coconut flakes.

Step 3

In a small saucepan over low heat, combine honey and olive oil. Heat until the mixture is smooth and fluid, stirring occasionally. Remove from heat and stir in the vanilla extract.
