Ingredients

  • 1 cup Besan (chickpea flour)
  • 0.5 cup Olive oil
  • 0.5 cup Low-fat milk
  • 0.75 cup Brown sugar
  • 0.5 teaspoon Cardamom powder
  • 2 tablespoons Chopped almonds

Directions

Step 1

Grease a square baking dish or tray with a small amount of olive oil to prevent the Mysore Pak from sticking.

In a non-stick pan, dry roast the besan over medium heat for about 5-6 minutes until it turns aromatic and slightly golden. Stir continuously to prevent burning.

In the same pan, add the olive oil and mix well with the roasted besan. Cook the mixture over medium heat, stirring continuously until well combined and the besan absorbs the oil.

In a separate saucepan, warm the low-fat milk and dissolve the brown sugar into it over low heat, stirring until completely melted.

Add the milk-sugar mixture gradually into the besan mixture, ensuring you stir continuously to prevent any lumps.

Cook the mixture on low to medium heat, stirring steadily until it thickens and starts to leave the sides of the pan.

Add the cardamom powder and mix thoroughly. Continue to cook until the mixture becomes a single mass and has a shiny surface.

Pour the mixture immediately into the prepared tray. Spread the mixture evenly using a spatula and sprinkle the chopped almonds on top.

Allow the Mysore Pak to cool for about 10 minutes, then cut into desired shapes with a sharp knife while still warm.

Let the pieces cool completely before removing them from the tray. Store in an airtight container.
