Ingredients

  • 1 3-4 pounds whole chicken
  • 2 tablespoons olive oil
  • 4 garlic cloves
  • 1 lemon
  • 1 teaspoon salt
  • 0.5 teaspoon ground black pepper
  • 1 teaspoon smoked paprika
  • 2 sprigs fresh rosemary
  • 2 tablespoons balsamic vinegar
  • 1 cup low sodium chicken broth

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Pat the chicken dry with paper towels and place it on a clean work surface.

Step 3

In a small bowl, combine olive oil, minced garlic, juice of the lemon, salt, pepper, and smoked paprika to form a paste.

Step 4

Using your fingers, gently separate the skin from the chicken meat and rub the paste under the skin, ensuring it's evenly distributed. Rub any remaining paste over the top of the chicken skin.

Insert the lemon halves and one rosemary sprig into the cavity of the chicken to infuse flavor.
