Ingredients

  • 500 grams lean mutton
  • 2 tablespoons olive oil
  • 1 large, chopped onion
  • 2 chopped celery stalks
  • 2 medium, diced carrots
  • 3 cloves, minced garlic
  • 1 liter low-sodium vegetable broth
  • 400 grams, chopped tomatoes
  • 1 large, cubed potato
  • 1 bay leaf
  • 0.5 teaspoon ground black pepper
  • 1 teaspoon dried thyme
  • 100 grams spinach leaves
  • 2 tablespoons, chopped fresh parsley
  • 1 tablespoon lemon juice

Directions

Step 1

Rinse the lean mutton under cold water and pat dry with paper towels. Trim off any visible fat to make it heart-healthy.

Step 2

Heat 1 tablespoon of olive oil in a large, heavy-bottomed pot over medium heat. Add the mutton pieces, and sear them on all sides until browned. Remove from the pot and set aside.

Step 3

In the same pot, add the remaining tablespoon of olive oil. Add chopped onion, celery, and carrots. Cook for about 5 minutes until the vegetables are soft and the onion is translucent.

Step 4

Stir in the minced garlic, cooking for an additional minute until fragrant.

Step 5

Return the seared mutton to the pot. Pour in the low-sodium vegetable broth and chopped tomatoes.

Step 6

Add the cubed potato, bay leaf, ground black pepper, and dried thyme to the pot.

Step 7

Bring the mixture to a gentle boil, then reduce the heat to low. Cover the pot and let it simmer for about 1 hour, or until the mutton is tender and the flavors are well combined.

Step 8

Add the spinach leaves to the pot and cook for another 10 minutes until they are wilted.

Step 9

Remove the bay leaf, taste, and adjust the seasoning if necessary.

Step 10

Stir in the chopped fresh parsley and lemon juice right before serving to enhance the fresh flavor.

Step 11

Ladle the soup into bowls and serve hot. Enjoy this heart-healthy mutton soup!
