Ingredients

  • 1.25 cups Whole wheat pastry flour
  • 0.25 cup Ground almonds
  • 0.25 cup Cold coconut oil
  • 3 tablespoons Ice water
  • 0.25 teaspoon Salt
  • 3 Fresh pears, ripe and firm
  • 2 tablespoons Honey
  • 1 tablespoon Fresh lemon juice
  • 1 teaspoon Vanilla extract
  • 0.5 teaspoon Ground cinnamon
  • 2 tablespoons Chopped walnuts
  • 1 tablespoon Unsweetened almond milk

Directions

Step 1

Preheat the oven to 375°F (190°C).

Step 2

In a medium bowl, combine the whole wheat pastry flour, ground almonds, and salt.

Step 3

Add the cold coconut oil in small pieces and blend into the dry ingredients using a fork or pastry cutter until the mixture resembles coarse crumbs.

Step 4

Gradually add the ice water, one tablespoon at a time, and mix until the dough comes together. Form it into a ball, wrap in plastic wrap, and refrigerate for 15 minutes.

Step 5

While the dough is chilling, peel, core, and slice the pears thinly. Place them into a large bowl.

Step 6

Add honey, lemon juice, vanilla extract, and ground cinnamon to the pears and gently mix to coat evenly.

Step 7

Remove the dough from the fridge and place it on a lightly floured surface. Roll it out to fit a 9-inch tart pan.

Step 8

Transfer the dough into the tart pan, pressing it evenly over the bottom and up the sides. Trim any excess.

Step 9

Arrange the pear slices over the crust in a circular pattern, starting from the outside and working your way in.

Step 10

Drizzle any remaining honey mixture over the pears.

Step 11

Sprinkle chopped walnuts over the top for added texture and flavor.

Step 12

Using a pastry brush, lightly brush the edges of the crust with unsweetened almond milk to help it brown during baking.

Step 13

Bake for 40-45 minutes until the pears are tender and the crust is golden brown.

Step 14

Remove from the oven and allow to cool slightly before serving.

Step 15

Enjoy your heart-healthy pear tart warm or at room temperature.
