Ingredients

  • 2 cups whole wheat flour
  • 0.5 cup olive oil
  • 0.25 cup cold water
  • 1 pound lean ground beef
  • 1 cup potatoes, peeled and diced
  • 0.5 cup rutabaga, peeled and diced
  • 1 cup carrot, peeled and diced
  • 1 medium onion, finely chopped
  • 0.25 cup low-sodium beef broth
  • 1 teaspoon fresh thyme leaves
  • 0.5 teaspoon black pepper
  • 0.25 teaspoon salt
  • 1 egg white, beaten

Directions

Step 1

In a bowl, combine whole wheat flour and a pinch of salt. Add olive oil gradually, mixing until crumbly.

Step 2

Slowly add cold water and mix until the dough forms a ball. Wrap in plastic and let it chill in the fridge for at least 20 minutes.

Step 3

Preheat the oven to 350°F (175°C).

Step 4

In a large skillet over medium heat, add the lean ground beef and cook until browned. Drain any excess fat.

Step 5

Add diced potatoes, rutabaga, carrot, onion, and beef broth to the skillet. Stir in thyme, black pepper, and salt. Cook for about 10 minutes until vegetables soften slightly.

Step 6

Divide the dough into four equal parts. Roll each into a circle about 8 inches in diameter on a lightly floured surface.

Step 7

Place a quarter of the filling into the center of each dough circle. Fold the dough over the filling and seal the edges by crimping.

Step 8

Place the pasties on a baking sheet lined with parchment paper. Brush the tops with beaten egg white.

Step 9

Bake in the preheated oven for 40-45 minutes until golden brown.

Step 10

Allow to cool slightly before serving. Enjoy your heart-healthy beef pasty!
