Ingredients

  • 5 medium Red bell peppers
  • 5 medium Red chilies
  • 500 grams Cherry tomatoes
  • 3 cloves Garlic
  • 1 inch Ginger
  • 200 ml Apple cider vinegar
  • 150 grams Honey
  • 2 tablespoons Lemon juice
  • 1 tablespoon Olive oil

Directions

Step 1

Wash and deseed the red bell peppers, then chop them into small pieces.

Step 2

Cut the red chilies in half, deseed them if you prefer a milder jam, and chop them roughly.

Step 3

Peel the garlic cloves and ginger, and then finely chop them.

Step 4

Add the chopped red bell peppers, chillies, cherry tomatoes, garlic, and ginger to a food processor and blend until finely chopped.

Step 5

In a large saucepan, heat the olive oil over medium heat. Add the blended mixture and cook for about 10 minutes, stirring occasionally.

Add the apple cider vinegar and honey to the saucepan. Stir well to combine and bring the mixture to a slow boil.

Step 7

Reduce the heat to low, allowing the mixture to simmer gently for about 45 minutes until the jam thickens. Stir occasionally to prevent sticking.

After 45 minutes, stir in the lemon juice and cook for an additional 5 minutes.
