Ingredients

  • 1 piece Boneless skinless chicken breast
  • 1 sheet Whole wheat puff pastry sheets
  • 1 tablespoon Olive oil
  • 1 cup Chopped spinach
  • 1 small Chopped onion
  • 2 cloves Minced garlic
  • 0.5 cup Low-sodium chicken broth
  • 0.25 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 2 tablespoons Fresh parsley
  • 1 piece Egg white
  • 2 tablespoons Low-fat Greek yogurt

Directions

Step 1

Preheat the oven to 400°F (200°C).

Step 2

In a pan, heat olive oil over medium heat, and add chopped onion. Sauté for 2-3 minutes until translucent.

Add minced garlic to the pan and cook for another minute.

Cut the chicken breast into small bite-sized pieces and add to the pan. Cook for 5-6 minutes until browned.

Stir in chopped spinach and cook until wilted, about 2 minutes.
