Ingredients

  • 250 grams Whole wheat flour
  • 7 grams Instant yeast
  • 2 tablespoons Olive oil
  • 150 milliliters Warm water
  • 1 teaspoon Salt
  • 100 grams Low-fat mozzarella cheese
  • 50 grams Feta cheese
  • 100 grams Baby spinach leaves
  • 100 grams Cherry tomatoes
  • 2 tablespoons Fresh dill
  • 0.5 Red onion
  • 0.5 teaspoon Black pepper
  • 1 tablespoon Lemon juice

Directions

Step 1

In a large mixing bowl, combine whole wheat flour, instant yeast, and salt. Add warm water and 1 tablespoon of olive oil. Stir until a dough begins to form.

Step 2

Transfer the dough onto a lightly floured surface and knead for about 8-10 minutes until smooth and elastic.

Step 3

Place the dough in a lightly oiled bowl, cover with a clean cloth, and let it rise in a warm place for about 1 hour or until it doubles in size.

Step 4

Preheat your oven to 220°C (428°F) and line a baking sheet with parchment paper.

Step 5

Punch down the risen dough and divide it into two equal portions. Roll each portion into an oval shape about 30cm long and 15cm wide.

Step 6

Transfer the dough ovals onto the prepared baking sheet. Gently fold the edges of each oval to form a boat shape.

Step 7

In a bowl, combine the low-fat mozzarella, crumbled feta, baby spinach, thinly sliced red onion, cherry tomatoes halved, chopped dill, black pepper, and lemon juice. Mix well.

Step 8

Divide the cheese and spinach mixture equally onto the dough boats, leaving a small border around the edges.

Step 9

Brush the edges of the dough with the remaining olive oil to promote even browning.

Step 10

Bake in the preheated oven for 20-25 minutes or until the crust is golden brown and the cheese is bubbly and lightly browned.

Step 11

Remove from the oven, let cool slightly, then slice and serve your heart-healthy cheese pide warm.
