Ingredients

  • 2 medium-sized eggplant
  • 3 garlic cloves
  • 2 tablespoons tahini
  • 3 tablespoons lemon juice
  • 1 tablespoon extra virgin olive oil
  • 0.5 teaspoon ground cumin
  • 0.5 teaspoon paprika
  • 0.5 teaspoon salt
  • 2 tablespoons fresh parsley
  • 0.25 teaspoon black pepper

Directions

Step 1

Preheat your oven to 400°F (200°C).

Step 2

Pierce the eggplants several times with a fork. This will allow steam to escape during cooking and prevent them from bursting.

Step 3

Place the eggplants on a baking sheet lined with parchment paper. Roast them in the preheated oven for about 30 to 40 minutes, turning occasionally, until the skin is charred and the interior is soft.

Step 4

During the last 10 minutes of roasting the eggplants, wrap the garlic cloves in a small piece of aluminum foil and add them to the baking sheet to roast.

Remove the eggplants and garlic from the oven and let them cool until they can be handled comfortably.
