Ingredients

  • 2 cups yuca (cassava) root, peeled and grated
  • 0.5 cup water
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon fresh oregano, chopped
  • 2 tablespoons ground flaxseeds
  • 1 tablespoon chia seeds
  • 0.5 teaspoon fine sea salt
  • 0.25 teaspoon freshly ground black pepper
  • 1 medium avocado, sliced
  • 1 tablespoon lemon juice

Directions

Step 1

Preheat a non-stick skillet or griddle over medium heat.

Step 2

In a large mixing bowl, combine the grated yuca and water. Stir well to hydrate the yuca.

Step 3

Add the olive oil, chopped oregano, ground flaxseeds, chia seeds, sea salt, and black pepper to the yuca mixture. Stir until well combined.

Step 4

Form the yuca mixture into 4 equal-sized balls, and then flatten each ball into a patty about 1/2 inch thick.

Step 5

Lightly coat the preheated skillet with a small amount of olive oil. Place the yuca patties onto the skillet.

Step 6

Cook the arepas for about 10-12 minutes on each side, or until they are golden brown and cooked through. Flip them carefully halfway through for even cooking.

Step 7

While the arepas are cooking, in a small bowl, toss the sliced avocado with lemon juice. This will prevent browning and add a fresh flavor.

Step 8

Once cooked, remove the arepas from the pan and let them cool slightly on a cooling rack.

Step 9

Serve these heart-healthy arepas topped with slices of lemon-avocado for a creamy contrast to the crispy exterior.
