Ingredients

  • 1 medium head Cauliflower
  • 2 medium Potatoes
  • 1 tablespoon Olive oil
  • 1 teaspoon Cumin seeds
  • 0.5 teaspoon Turmeric powder
  • 1 teaspoon Coriander powder
  • 0.5 teaspoon Cumin powder
  • 0.25 teaspoon Red chili powder
  • 1 inch piece Ginger
  • 2 medium Tomatoes
  • 1 small Green chili
  • 2 tablespoons Fresh cilantro
  • 0.5 teaspoon Salt
  • 1 tablespoon Lemon juice

Directions

Step 1

Cut the cauliflower into small florets and wash thoroughly. Peel and dice the potatoes into 1-inch cubes.

Step 2

Finely chop the tomatoes and ginger. Slit the green chili lengthwise.

Step 3

Heat the olive oil in a large non-stick pan over medium heat. Add the cumin seeds and let them sizzle for 30 seconds.

Step 4

Add the ginger and green chili to the pan, sauté for another minute until fragrant.

Step 5

Add the diced potatoes, cauliflower florets, turmeric powder, coriander powder, cumin powder, red chili powder, and salt. Stir to coat the vegetables evenly with the spices.

Step 6

Cover the pan and cook on medium-low heat, stirring occasionally, until the potatoes and cauliflower are tender, about 15 minutes.

Step 7

Add the chopped tomatoes, mix well, and cook for another 5 minutes uncovered, allowing the tomatoes to soften and integrate into the dish.

Step 8

Turn off the heat, garnish with freshly chopped cilantro, and drizzle with fresh lemon juice.

Step 9

Serve hot as a main dish or side, paired with whole grain roti or brown rice.
