Ingredients

  • 4 medium Potatoes
  • 1 tablespoon Olive oil
  • 0.5 teaspoon Mustard seeds
  • 1 medium Onion
  • 1 small Green chili
  • 2 cloves Garlic cloves
  • 0.25 teaspoon Turmeric powder
  • 2 tablespoons Cilantro leaves
  • 0.25 teaspoon Salt
  • 1 tablespoon Lemon juice

Directions

Step 1

Peel and wash the potatoes, then cut them into quarters.

Step 2

In a large pot, place the potatoes with enough water to cover them. Bring the water to a boil over high heat, then reduce to a simmer and cook until the potatoes are tender, about 15 minutes.

Step 3

While the potatoes are cooking, finely chop the onion, green chili, and garlic cloves.

Step 4

When the potatoes are done cooking, drain and place them in a large mixing bowl. Mash them while they are hot until they reach a smooth consistency.

Step 5

In a small skillet, heat the olive oil over medium heat. Add the mustard seeds and allow them to sizzle for 30 seconds, then add the chopped onion, garlic, and green chili. Sauté for about 2-3 minutes until the onions turn translucent.

Step 6

Add turmeric powder to the skillet and cook for another minute, ensuring the spices are well combined.

Step 7

Add the sautéed onion mixture to the mashed potatoes, along with salt and lemon juice. Mix everything thoroughly.

Step 8

Chop the cilantro leaves and stir them into the potato mixture.

Step 9

Adjust the seasoning if necessary and serve warm, garnished with extra cilantro if desired.
