Ingredients

  • 500 grams Baby potatoes
  • 2 tablespoons Olive oil
  • 1 teaspoon Cumin seeds
  • 0.5 teaspoon Turmeric powder
  • 1 teaspoon Coriander powder
  • 1 teaspoon Cumin powder
  • 0.25 teaspoon Red chili powder
  • 1 medium Tomato, chopped
  • 2 small Green chilies, finely chopped
  • 1 teaspoon Ginger, grated
  • 1 medium Bell pepper, chopped
  • 1 tablespoon Lemon juice
  • 2 tablespoons Fresh cilantro, chopped
  • 0.5 teaspoon Salt

Directions

Step 1

Wash and boil the baby potatoes in a pot of water until they are just tender, about 10 minutes. Drain and allow them to cool slightly before peeling or leave unpeeled for additional fiber.

Step 2

Heat olive oil in a non-stick pan over medium heat. Add cumin seeds and let them sizzle for a few seconds until aromatic.

Step 3

Add the grated ginger and green chilies to the pan, sauté for a minute until fragrant.

Step 4

Add the chopped tomato and cook for about 3 minutes until it softens and starts breaking down.

Step 5

Mix in the turmeric powder, coriander powder, cumin powder, and red chili powder. Stir well to combine the spices with the tomato mixture.

Step 6

Add the boiled baby potatoes and bell pepper to the pan. Stir to coat with the spice mixture.

Step 7

Season with salt and stir again. Cover and cook on low heat for about 10 minutes, stirring occasionally to prevent sticking.

Step 8

Once the potatoes are fully cooked and infused with the spices, remove the lid, and drizzle lemon juice over the sabji. Mix well.

Step 9

Garnish with fresh cilantro before serving. Enjoy this heart-healthy dish with whole-grain roti or as a side dish.
