Ingredients

  • 500 grams Baby potatoes
  • 2 tablespoons Olive oil
  • 1 teaspoon Cumin seeds
  • 1 teaspoon Mustard seeds
  • 1 medium, chopped Onion
  • 1 medium, chopped Tomato
  • 2 cloves, minced Garlic
  • 1 inch, grated Ginger
  • 0.5 teaspoon Turmeric powder
  • 1 teaspoon Coriander powder
  • 0.5 teaspoon Red chili powder
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 2 tablespoons, chopped Fresh coriander leaves
  • 100 milliliters Water

Directions

Step 1

Begin by washing the baby potatoes thoroughly. If they are small, keep them whole; otherwise, cut them into half.

Step 2

Boil the potatoes in water until they are tender but not mushy. This should take about 10 minutes. Drain and set aside.

Step 3

In a large non-stick pan, heat olive oil over medium heat.

Step 4

Add cumin seeds and mustard seeds, allowing them to splutter for a few seconds.

Step 5

Add the chopped onion and sauté until it turns golden brown.

Step 6

Add minced garlic and grated ginger to the onions. Stir for about 1 minute until fragrant.

Step 7

Add the chopped tomato and cook until it becomes mushy and starts releasing oil.

Step 8

Mix in the turmeric powder, coriander powder, and red chili powder. Stir fry the spices for about 30 seconds to release their flavors.

Step 9

Add the boiled potatoes into the pan. Stir well to coat them with the spice mixture.

Step 10

Pour in 100 ml of water, adding salt and black pepper. Stir to combine.

Step 11

Cover the pan with a lid and let the Aaloo Sabzi simmer for about 7 to 10 minutes over low heat until the flavors meld together and the water reduces to form a thick gravy.

Step 12

Finally, garnish with freshly chopped coriander leaves and mix well before serving.

Step 13

Serve warm as a side dish with whole grain rotis or brown rice for a heart-healthy meal.
