Ingredients

  • 200 grams Whole wheat flour
  • 100 grams All-purpose flour
  • 5 grams Instant yeast
  • 20 grams Sugar
  • 150 milliliters Warm water
  • 50 milliliters Unsweetened almond milk (or any plant-based milk)
  • 1 teaspoon Salt
  • 1 tablespoon Vegetable oil

Directions

Step 1

In a large mixing bowl, combine the whole wheat flour, all-purpose flour, instant yeast, sugar, and salt. Stir well to evenly distribute the dry ingredients.

Step 2

In a separate smaller bowl, mix the warm water, almond milk, and vegetable oil.

Step 3

Gradually pour the liquid mixture into the dry ingredients while stirring with a wooden spoon or chopsticks, until it begins to form a shaggy dough.

Step 4

Transfer the dough to a clean, lightly floured surface and knead for about 8-10 minutes, or until the dough becomes smooth and elastic.

Step 5

Place the dough in a lightly greased bowl, cover with a damp kitchen towel or plastic wrap, and let it rest in a warm place for 1 hour, or until it doubles in size.

Step 6

Once the dough has risen, punch it down to deflate and knead it for another 2 minutes to remove any air bubbles.

Step 7

Roll the dough into a log shape and cut it into 8 equal pieces. Shape each piece into a smooth ball or any desired shape.

Step 8

Place each dough ball onto a small square of parchment paper to prevent sticking, and arrange them in a steamer basket with space in between for expansion.

Step 9

Cover the steamer with a lid and allow the buns to rest for an additional 15 minutes to rise slightly.

Step 10

Bring a pot of water to a boil. Place the steamer over the boiling water and steam the buns over medium-high heat for 15 minutes. Avoid lifting the lid during steaming.

Step 11

Turn off the heat and let the buns rest in the steamer for 5 minutes before removing the lid to prevent them from collapsing.

Step 12

Serve the mantou warm on their own or with your favorite dipping sauces. They can also be stored in an airtight container and reheated as needed.
